Low carb as it can get – Pork Stir Fry coupled with Cauliflower Rice. I love stir fry dishes because there’s extremely flexible. You can put any kind of meat, or even fish, and the choice of vegetables is unlimited. This time we’re going with more classical ingredients, like bell peppers, onion, garlic and carrots. Cauliflower rice is a great way to kill the original flavor of cauliflower, for those that don’t enjoy it. It’s a great discovery for me, and I’m always looking forward to having it as a side.

Pork Stir Fry

  • Marinated meat
    • 1x Pork tenderloin (600g)
    • 1x Egg
    • Soy sauce
    • Balsamic vinegar
    • Salt
    • Pepper
    • Sesame oil
    • Optional: Tiny bacon strips
  • Coconut oil
  • 1 Yellow bell pepper
  • 1/2 Red bell pepper
  • 1 Onion
  • 2 Medium Carrots
  • 3 Garlic cloves
  • Ginger
  • 2 Eggs
  • 100g Cabbage
  • Soy sauce
  • Oyster sauce
  • 150ml Tomato sauce
  • Optional: Lemon, starch (to thicken up)

Served with a side of hard Croatian cheese.

Cauliflower Rice with Leek

  • 1 Whole Cauliflower (1kg), grated
  • Extra virgin olive oil
  • 1 Leek (200g?)
  • 3 Garlic cloves
  • 3 Eggs
  • 3 Tablespoons of Heavy Cream
  • Seasoning
